We did alot of walking! It was very good exercise though. The Monuments were a whole lot bigger in person than on Tv lol. All of the Monuments are very pretty. This blog was short. EASY TO MAKE BREAKFAST SANDWICHES
EASY TO MAKE BREAKFAST SANDWICHES

*Prep Time: 10 min. *Cook Time: 90 sec. *Servings: 12 Breakfast Sandwiches
Ingredients:
- 1 dozen Eggs
- 12 English Muffins
- 12 Slices of Cheese
- 12 slices of Canadian Bacon
- Salt and Pepper
To begin you will need to preheat the oven to 350 degrees.
I don’t know about you, but I love the shape of the eggs in the McMuffin sandwich. I’ve tried MANY different ways to achieve this, but in the end, the muffin pan method beats them all!
Spray your muffin pan with cooking spray, and place a cracked egg into each compartment. I really like these 12 muffin pans, but any muffin pan will do.
Next season the eggs with a little salt and pepper.
Place the eggs into the preheated oven and them cook for 10-15 minutes. you want them to be solid and white. NO JIGGLY CLEAR STUFF!
While the eggs are baking you can prep the rest of the ingredients.
Halve the English Muffins.
Heat a griddle pan and spray with cooking spray.
Place the English Muffins face down on the pan and cook until toasted and brown.
After that, brown the Canadian bacon on both sides.
by this time the eggs should be done.
Trust me. The are completely cooked through, even the yolks.

Assemble the sandwiches.
Don’t the eggs look so cute!
Don’t the eggs look so cute!
Put them together and wrap them individually in foil.
From this point you can eat them OR freeze them for later.

To reheat, remove the from the foil and place in the microwave for 90-100 seconds.

8 Things to Stop Worrying About
1. Other peoples’ expectations of you. At the end of the day, it’s your life not their life - so just be yourself and set,and go for, your own goals.
2. What other people say and do. It’s not up to us to control other people, or to change how they act, or to make their decisions.
3. Expecting perfection. It’s unrealistic to aim for perfection. You’ll just be disappointed and discouraged all the time.
4. Getting it wrong. We all make mistakes in our journey through this life. That’s simply part of learning, and being normal and human.
6. Fitting in. Although social skills matter, and it’s good to think of others, you also need to be yourself - a special, unique individual. Beware - conformity can kill individuality.
7. Being right. This is highly over-rated and can cause a lot of stress. If you’re confident and real you don’t need to prove you’re right!
8. Life being out of control. At the end of the day, there’s not much we can control – except our own reactions and our attitudes to problems. So change what you can – and then relax and enjoy life.
i hope it makes life a whole lot easier
How to Cope with Hurt and Pain
1. Try to give it form and to put it into words. Don’t allow it to be shapeless as that’s harder to resolve.
2. Agree that you will look at it and not ignore the pain - as any unexpressed emotions lead to problems later on.
3. Avoid triggers and memories that take you back in time, and open up old wounds, so you feel the pain again.
4. Ground yourself in the present and who you are today – and remember you have strengths, and good people in your life.
5. Don’t allow the hurt and pain to take control of who you are, or limit what you’ll do, or the goals you set yourself.
6. Spend as much time as possible with those who treat you well – with those who see your worth, and who love and value you.

Tips for Improving your Self -Esteem
The following suggestions may be helpful for a person who finds that they are struggling with low self-esteem:
1. It starts with a decision to be your own person. Don’t live your life to please, or to impress, someone else.
2. Try and grasp the fact we’re different and have different goals and values … And don’t be swayed by other people who criticise your dreams.
3. Don’t compare your path or journey to someone else’s journey as we start from different places and face different challenges.
4. Be kind, understanding and patient with yourself. Accept that failures and mistakes are part of everybody’s life. Also, choose to frame mistakes as learning opportunities.
5. You need to root for yourself, and seek to be your own best friend. Don’t denigrate yourself – in public, or when you’re alone.
6. Remind yourself a weakness can become a strength, in time. It takes patience effort – but, eventually, things change!
7. Make a list of what you’re good at, and keep adding to the list. Also, note the strengths that others see, and comment on, as well.
8. Treat yourself with respect and praise the things that you do well. Don’t write them off as “nothing”, or as being “no big deal”.
9. Find ways to dissipate and channel negative emotions. Don’t allow them to dictate the way you start to see yourself.
10. Spend time with those who like you, and can see your worth and value … And, ignore those who attack you, and would like to see you fail.
11. Choose to stand up for yourself, and value being more assertive. Also, decide to start to set and then enforce appropriate, healthy boundaries.
12. Admit your mistakes - then learn to laugh at yourself. It helps remove the pressure and the stress of “being perfect”!

Back-to-School Made Easy
english muffin mini pizza's
Ingredients
2 tablespoons olive oil
1 onion, chopped (about 2 cups)
2 small carrots, grated
1 red bell pepper, chopped (about 2 cups)
1 medium zucchini, cut into 1/2-inch pieces (about 3 cups)
1 clove garlic, sliced
Kosher salt and freshly ground black pepper
One 28-ounce can crushed tomatoes
6 English muffins, split
1 1/2 cups shredded mozzarella (about 6 ounces)
1/4 cup grated Romano cheese
Assorted toppings: sliced pepperoni or ham, cooked sausage or bacon, olives, cooked chopped broccoli, hot pepper slices or pineapple
2 tablespoons olive oil
1 onion, chopped (about 2 cups)
2 small carrots, grated
1 red bell pepper, chopped (about 2 cups)
1 medium zucchini, cut into 1/2-inch pieces (about 3 cups)
1 clove garlic, sliced
Kosher salt and freshly ground black pepper
One 28-ounce can crushed tomatoes
6 English muffins, split
1 1/2 cups shredded mozzarella (about 6 ounces)
1/4 cup grated Romano cheese
Assorted toppings: sliced pepperoni or ham, cooked sausage or bacon, olives, cooked chopped broccoli, hot pepper slices or pineapple
Directions
Heat the oil in a large pot over medium-high heat. Add the onions and cook, stirring, until softened and starting to brown, about 5 minutes. Stir in the carrots, peppers and zucchini and cook, stirring, until softened, about 15 minutes. Add the garlic, 1 teaspoon salt and 1/4 teaspoon pepper. Continue to cook, stirring, until the vegetables are lightly browned, for 10 minutes.
Stir in the crushed tomatoes. Add 1 cup water to the empty tomato can and pour into the pot. Reduce the heat to medium low and simmer until the vegetables are very soft, the sauce has thickened slightly and the rawness from the canned tomatoes has mellowed, about 20 minutes. Puree the vegetables with a hand blender or transfer to a blender and puree until smooth, holding down the lid with a kitchen towel to prevent the hot sauce from spraying. Season with additional salt and pepper if needed and cool. You will have about 5 cups of sauce.
While the sauce simmers, lay the English muffin halves in a single layer on a baking sheet and lightly toast in a toaster oven set to broil or under an oven broiler, 2 to 3 minutes. Spread the top of each muffin with 1 to 2 tablespoons of sauce. Combine the 2 cheeses and sprinkle over the sauce. To serve as a snack right away, add your desired toppings and place the assembled pizzas under the broiler in the oven or toaster oven until the cheese is melted, 2 to 3 minutes.
Cook's Notes: The sauce recipe makes more than you need for 12 pizzas. Keep the extra in the refrigerator for up to 1 week and use in any recipe where you would normally use marinara sauce; or freeze in 1-cup amounts in plastic freezer storage bags for your next batch of English muffin pizzas.
To make ahead: Place the entire tray of mini pizzas in the freezer and freeze until hard, about 1 hour. Stack in a plastic freezer bag until ready to eat. To reheat, place the frozen pizzas on a piece of heavy-duty foil, add any toppings you like and bake in a toaster oven at 400 degrees F until golden, hot and the cheese is melted, 13 to 15 minutes.
